Loaded + hilly = triple. It's not fashionable, but it works really well. I use 26-42-52 witha 12-30 and it's always useful to have that bail out gear if you're loaded.
If you really want to use 11spd you can use the inner and middle ring of a triple to cover yourself (comparison here). Do you really need a 50/11?
I'd love a Sugino OX601D for exactly that kind of thing, but £££. I think the sub-compact crankset idea is really useful but there's so little available. I think the choice is Sugino, Praxis (down to 30T with their special rings), Middleburn and a particular modular FSA crankset.
