would you really recommend ss with discs over rim brakes and flipflop - i was looking at getting the flyer for the latter reason of being able to ride fixed? but Ive been in 2 minds that i may revert to getting disc option

V. nice, pretty much my dream build, unsure I'll get there soon though (combination of funds and the bike I've bought).
With regards to SS vs FG I’ve come to the same conclusion for this build, I can go with FG on the Pearson or choose to give my knees a rest.

Here is my commuter which I think is pretty similar to what you're building, personally for me I would use SS over FG, but then again I'm a old fart who started to appreciate coasting:
