Ground is my local and it's decent trading mainly on being cosy and friendly. Recently refurbished and open late at weekends for booze @mrs_socks - however it is in Kemptown so if you're in Brighton that probably means it's out of range.
Small Batch have skyrocketed from a small roasters and a cart to a chain of about 8 shops in Brighton and Worthing. It's well done, their filters are decent but I find their espresso based drinks a bit specific.
There's the main one on Jubilee Street by the library. Probably be busy and closes around 4ish. Nearby there's also Bond Street Coffee which was started by Horsham Roasters and a guy who used to work at Coffee@33 (Trafalgar Street - my previous local).
The Marwood is also central and reckoned to be OK but I don't particularly like it - like a weird pub.
Small Batch or Bond Street probably your best bets for the day.
