  • Made risotto for the first time in a slow cooker tonight.

    Seemed like a interesting idea, sweat allium's in a pan, add rice to coat with oil. Put in slow cooker, add stock and mushrooms. Leave for two hours on medium.

    The rice broke down way too much, it's more mush than sticky grains. If I try it again I think I'll have to take 30 min off the cooking time.

    As I made 4 portions and have only eaten one I'm hoping that it'll make nice little risotto patties that I can coat in panko and fry over the weekend.

    Meh...

    I normally do make it by the standing-by-the-stove-for 30-minutes method but I wondered how well the hands-off method worked.

    Not very well it seems.
