There's one the waitrose website that is very good. Don't add extra banana as it makes it too dense. If you want it more sweet, just dust the buttered loaf tray with more sugar before adding the batter.

Loads of Kansas dry rub recipes out there that work on just about any meat. I make up ziploc bags full of it.

braise for ages in apple juice, soy sauce, ginger, garlic, cinnamon stick and star anise. Think it's a HFW idea originally. chuck in a few tails too :)

Picked up some more wings at the tramp's buffet today, gonna leave them sitting in the BBQ rub for 24 hours and see what difference it makes to the flavour... Mostly sugar and salt in the rub so it should act like a dry brine and make the finished product even juicier...
It'll be a very late dinner treat while the Chelsea game is on tomorrow night... Looking forward to it...

Actually ended up doing almost that. Honey and water instead of apple juice and some balsamic vinegar, garlic, cinnamon, star anise and ginger in the stock as well.
Sitting in the slow cooker for 10 hours currently.
The butcher had whole pigs heads for £2. Very tempted to have a go at this soon.
