  • About to put these poorly tied bad boys into the oven to get the crackling going and then get them cooking slow and low for the time I'm out having boozy brunch say 4 hrs.
    Pork belly marinated in soy, honey, apple cider vinegar, garlic, paprika, salt, pepper and cumin, then stuffed with some diced mushrooms, bread crumbs and shallots.

    Hoping the crackling comes out better than my last failed never quite hot enough previous attempt..

  • pork came out amazing, crackling not so much.

    Don't think I'm getting the skin hot enough, will probably start cooking the skin seperately from the flesh, so I can get some decent crackling in future..
