CX-Rays are a waste of money if you're not racing. Use Sapim Race or DT Comp for stiffer stronger cheaper wheels, or even Alpine III for even better durability as you're fairly big and going off road
should I go for 6bolt or centerlock?
I'd go 6-bolt given the choice, nobody knows how long it will be before Shimano has yet another change of mind and you're stuck with another obsolete proprietary "standard".
