  • Thank you - army issue.

  • Does anyone know what grit the Norton combination oil stone is? Norton just say it's coarse / fine.

The fine side feels like it could be around 1,000+ grit, and it brings up a decent mirror finish on the edge (as far as I can see)

Either way, I'm looking for a finer grit oil stone. Any recommendations?

Next up - I want a decent boning knife. I'm using a 4" Sabatier at the moment, but it doesn't have the pointiness and narrowness of a boning knife, and is useless for fish.

  • I'd like to buy my old man a decent Chef's knife for Christmas. He's... well, a bit crap about caring for things with very particular routines, so it probably has to be stainless and 'sharpenable' with a normal steel. Any advance on Global?

Edit: bugger, just remembered it might be 'bad luck'. Will have to have a think about whether I believe in all that mumbo jumbo. Don't thinl he does.

  • When you give it to him he has to give you a penny. Then it will be fine

  • Ah cool, sounds like a good deal :)

  • swiss army knife : chefs knife
had mine about 4 years and i can't fault it

  • Im in Kyoto for the next 2 days and have bought a knife already from this guy...

And earlier in Osaka there were tons of these cabinets :)

  • I'm after a santoku knife for my wife. 12cm blade. Where's a good place to buy online? Not too spendy.

  • Picked this up at my mate's shop yesterday, No.6 Bubinga... Feels lovely...

  • Just4u... 😬

  • TK Maxx or what would you consider not too spendy?

  • Agree on the Victorinox chef's knife. Very good for the price, keeps a decent edge and sharpens well. It doesn't look as nice or expensive as a Global though (although personally I far prefer the handle on the Victorinox, I can't get on with the Global handles).

  • This thread got gentrified pretty quickly

  • Recommend me a knife/sak for traveling:
LadyLiz is off to Nepal in the spring for a few weeks of trekking, tea houses and middle class spiritualism. Guessing something sak like so she has tweezers, scissors etc would be useful.

Not looking to spend silly money but nothing cheap and tacky either.

  • Anyone point me in the right direction of a decent non fancy small axe for making kindling from my normal delivery of chestnut logs?

Links to guides for caring/sharpening would also be appreciated. Cheees.
