Ah, they look decent. We'd not planned to ride anything and there weren't any obvious rental places but looks like you can sort it out online beforehand. If it's like the Azores, they can just drop off the bikes to your hotel when you need them and will collect when you're done.

Yep, that seems straightforward, I was more looking for trails/routes sources to be independent from a guide. I think we could ride up to the top along roads and then pic one of the trails I linked above, they seem quite obvious/hard to miss

Strava? Look for local routes and/or the heatmap for your location. RideWithGPS, etc. too.

Have you asked the bike shop? They're likely to know the best local routes and might have route maps of the area.
