SRAM do a CX1 group with cantilevers (the Avid Ultimates which are fantastic). You'd have a spare derailleur mind.

I'm getting a bit confused re a Shimano hydro set up...
My frame has a post mount for the rear and a flat mount for the fork.
I've ordered a 6800 / hydro groupset which has:
- ST-RS685 Hydraulic Disc Brake STI's
- RS805 Disc Brakes (Flat Mount)
Which means I need to order a single post mount caliper, right? There seems to be no difference between front and rear.
Do I need a

if I want it to match the front RS805?

You can use either.
I would recommend rs785 because you can easily switch over without changing the hose end. They (RS805 flatmount & rs785 postmount) use the same m8 fitting.
r785 has a banjo fitting where the hose angle is adjustable but you dont really need that.
rs785 is a sleeker design with the hose on the inside.

ultegra hubs have a knurled adjuster. ultegra hubs are nearly dura ace standard bit heavier.

any I think so long as you match the speeds. the cable pull on SRAM MTB is the same as road. I currently have X9 10 speed matched to Rival mechs and cranks

While we're on SRAM - I've got 3 things I'm trying to work out:
Is it true that the WiFli road derailleurs (apex/rival/force) can manage a 12-36t cassette? They're only marketed as max 32t but I see varying reports.
Does anyone have any preference between rival 2x10 speed derailleurs and apex 2x10 speed derailleurs - both selling new for about the same price now, but assume the rival ones are an old version before they went 11 speed.
What's the best SRAM MTB rear derailleur at a reasonable price point (2x10)? Would the shifting be noticeably worse for road use than an apex/rival RD? (mostly want for the gearing not off-roading)

Looked into this a while back, I think as a rule of thumb road/ old mtb uses 1:1 actuation, whilst newer mtb groups use their 'x-actuation' which is something different.
Does anyone make/sell groupsets for single speed cx? That is, with cantilever (or similar) brakes and a single chainring?
