So stick with 23mm wide rims with 23mm tyres? As much as I want wider rims, I'm not really too knee in stretching a 23 tyre over a 25 rims.

Tubs or clinchers? If tubs, I'd go narrower than 23. I run 22c Cronos on wide 808 Firecrest tubular rims. If clinchers, then 23s on 23s. You might be able to get 23 clincher tyres on 25 rims, but I'm not going to volunteer to try it...

I've had a 20mm tyre on a 24mm rim. It's fine.

Nope, but it's noticeably narrower than the brake track. I'll try and remember to do so once I get back to the UK.

Two wheelset, one for track, one for crit.
I don't think there's manuy obstacle on the track to worry about riding on tyres smaller than the rims.

It also depends on the tire shape. I have Schwalbe one 25s on my Aeolus 5 wheelset and they are perfectly aligned. I tried a Michelin pro4 23 and that also align (I only don't use them because they no longer sell them)

Really happy with my R24s. Leaps and bounds better, and the best part of £100 cheaper, than the Arc22s they replaced

No, the R24 doesn't use the R460 rim, it uses a cheaper pinned joint rim. DT claim 120g difference, not 200g

Anyone got any experience of V Sprint wheels? Thinking of getting some carbon tubs and seem like good value.....mainly for racing/attempting to ride quickly....

Any recommendation on a decent carbon tub rim to build up on 24h rims?
I'm struggling to find anything online without going down the Chinese crabon route. I'll do that as a last resort but I'd rather have some branding behind me.
