new pizza place in HH was dissapoint. reafirms my suspicion that pizza in london is a dumping ground for poor ingredients. mechanically reclaimed 'ham', two anchovies and one artichoke. papa johns does it better.

I'll post some of my recipes too.I found a lot of BBQ ribs recipes, do some of you use Plancha sometimes ?
About Cerebos, they use an old french proverb "to catch a bird, put salt on it's tail".
An about the "fleur de sel" there's something special other than it's price. It's not salty until in the mouth, so it's waste to cook with. It must be only put in the plate.

Anyone know of a good but small mincer, was flicking through the byron cookbook and thought about making my own burgers, seems you need to mince the near yourself for best results. So anyone seen one which isn't part of a mixer, preferably not hand powered...

You can mince meat with a knife, I'm not sure getting a mincer would be a great investment.
I know you can get an attachment for a kitchen aid, so maybe if you had something similar there might be an attachment you could buy?

This - electric mincers I've used are either big and clunky or small and useless. Wouldn't go down the attachment route. Hand powered are messy and fiddly. Knife gets good results for small batches. Butcher gets better if asked nicely.

I have a meat mixer. It's massive an noisy and a bit of a pain to clean. But I think that's the best bet if you need to mince meat at home. I use it for making salami.
The small ones are no good and the hand ones are a pain in the arse.
For burgers the best is just to ask your butcher to mince it.

This one does the job. But it is large and loud. And some bits are made of plastic which I would rather they were something more sturdy

I've got the attachment for our Kenwood and it's pretty darn good, nearly everything's metal and fairly easy to clean, gets used for grinding pork for polpette and chicken/prawns for wontons. I was worried the food mixer wouldn't have the torque but it makes mince meat of it.

Frustrating that I don't have a large enough kitchen to hold all the kitchen appliances I want to have..

Not that one, ours is a Kenwood Chef Premier, similar price though. I bought the mincer and a small whizzer thing in a sale. Top tip is to run a slice of bread through it when you're done and it does half the cleaning for you!

Yup, can't remember the last time I used mine but they're great...
Twas a bit of a gimmick at a restaurant, I'd stick to your cast iron.
