  • How does he manage day to day? Poor Jill...

  • That sounds do-able. I've got a pretty good range of wet and dry grades from re-finishing aluminium bike stuff. Cheers!

I'm a big fan of opinels. Got a couple of 8s that permanently live in pencil case and camping bits bag. Removed the locking ring on the pencil case knife as it's often in my bag, out and about.

  • trimming branches and working dense materials.

How dense are your food stuffs?

  • I'd just buy a whetstone TBH.

They last for ages and it's a useful thing to have.

Or you could get a lansky system copy from aliexpress. They're pretty good - although not the be/end-all they're made out to be. I still have mixed feelings about mine.

  • I was thinking of getting a whetstone - the steel is pretty useless for sharpening the smaller knives i have. I wasn't sure if a whetstone would be any good for taking the edge back past the notches, though.

  • was more looking for a longer blade, than the ability to chop through branches...

  • You'd need a coarse stone to re-profile the edge, then work up through progressively finer grades to get to a fine level of sharpness. I've got a few sharpening stones but the Lansky system (or knock-offs) is the one I find has the best ease of use/edge quality balance. There may be other systems out there which are better.

  • What General_Strike said. Although it depends on what grade stone you get. If you could find something with say a 600 on one side and then something in the '000s on the other I'm sure with some work the 600 side Would take most of it off.

Otherwise you could always see if you can pay someone. If its just putting it back to good enough nick so that you can go back to just maintaining the edge with a steel it might be easier and more economical..

  • My local butchers sharpens knives at £2 a go. Might be an option if you can't be arsed/ don't feel confident.

  • They'll probably chew it to shit tho'... My gf's dad got all his knives done by a travelling sharpener guy, they were razor sharp but looked like they'd been in a medieval battle... Took loads of steel off as well... Beware...

  • slightly off topic but somewhat related. i've bought a knife for a mate as a wedding gift and spent more than I'd ever for myself, now need to get it engraved, i've googled and there are lots of places, i just can't afford to get it wrong though...wondering if anyone can recommend an engraver?

  • I might give it a go with some (relatively) coarse paper and a block, see if i can get it past the notches without chewing it up, then step down the grit + get myself a whetstone.

I prefer working out how to do something myself where possible. Although personal experience tells me that's also the best way of fucking something up more than it was to begin with :-D

  • My ex used to swear by the old guy in Bond St tube station. Don't know if he's still there though.

Otherwise I used a place on Compton Street (near Old Street x Clarkenwell) who did glass well and do a lot of trophies.

  • Bought these topiary shears for me mum, who ever put a link up to the Niwaki website has a lot to answer for...

  • Those are beautiful. Wish my mum did topiary.

Am I going to regret subscribing to this thread?

  • Compton Street is handy, cheers

  • I've been trying to find out where to go to buy a knife or see knives being made in Japan, anyone got tips?

  • Kitchen rather than Samurai

  • Obviously referring to a sword as a knife is doing it an injustice

  • I just inherited my grandfather's japanese chisel. He (an Englishman) met my Japanese grandmother in Japan whilst out in Japan as an engineer during the Korean war. Ever since he was enamoured with the culture. He became a 5th dan (if I remember rightly) japanese doll maker amongst other things! As
Someone training to become an engineer myself I put great value in good tools used well and this one shall be well treasured.

  • Not sure about making but to buy:
    Osaka: Tower Knives
    Kyoto: Shigeharu
    Tokyo: Union Commerce

  • I was in a nice shop just over the river from asakusa. They were fitting handles when I was there. I'll see if I can find directions next tile I'm with a computer.
I don't think you'll find an actual smith anywere in town.
