Anything else you can use to test the position? (I.e. another bike?)

After the bike fit, I've come to a conclusion that I'm awkward shape!

If I go down a size with the canyon from a s to a xs, I'll need probably a need a 150mm stem...

Not awkward, pro.

Sounds like you need a longer lower geo. Your only option is to upgrade to the Aeroad ;)
