Do you have a blood sugar monitor? Might be worth using one for a while at various points throughout the day to see how your blood sugar is changing and then maybe increase your fat/protein intake to level things out a bit...
Obviously I'm no doctor but I have a similar thing of crashing easily and eating more fat/protein at certain times really makes a difference.
Also, Ireland = Vitamin D deficiency ;)
