Rubber's another floor option I forgot. Not sure how sustainable it is as a complete product, although latex is harvested from trees (as is cork) so should be better than vinyl. I quite like the circular studded stuff in jolly colours, that may also remind you of school...

You could do the sheet stuff just where you need to? eg. shower/bath
Or I'm sure you could get in in more neutral tones.
Seems a bit wierd to me to have it over the tiles though...
