@dracula oh god, not sure if my dad is in the country long enough to get a visit in this time but he would fucking love your place. but I might still pop in for my birthday in early june.
Only had 'proper' cajun once and it was at a place in the middle of nowhere called Ron's Cajun Connection (ronscajunconnection.com) in Utica, Illinois (90 miles out of chicago) where the owner had moved up from Louisiana. he had similiar issues with his boils being nowhere near the sea but apparently when he could get the crawfish they were legendary. the food was amazing.
