Reckon I'll do something by Pellegrino Artusi who, apart from being an excellent 19th-century cook, is a delight to read: relaxed, knowledgable, and a little waggish to boot. His Science in the Kitchen and the Art of Eating Well is worth looking up.

I have 4/5 left for us tonight.. I'm thinking halibut/artichokes pie, but since I'll probably go to the pub and not to the fishmonger, they will most likely just end up being stuffed and pan roasted.
