I think it's pretty easy. I've seen some videos where people have made custom mora handles on YouTube and it seems pretty straightforward. I'm on my phone but try searching for custom mora handles on YouTube and I'm sure something will show up.

It doesn't help your current situation but I think they also sell blade blanks.

Yeah I saw the blade blanks so searched for videos just after posting that.

Looks fairly simple, drill a couple holes, epoxy the blank in and get shaping.

Now to decide, I have access to some offcuts of the pine used to surface the velodrome so do I use that or go for a more interesting wood?

Epic dredge... did you make the Velo pine handled knife mentioned here?

I have some used & new velo pine offcuts, plus a fair bit of Cherry... a mate suggested making DIY knife handles from some of it.
