  • +1 Beef cheeks are great in chilli... Masher sounds a bit brutal tho', I like to let the meat fall apart naturally, gets a bit too furry otherwise, IYKWIM...

  • Never used cheek (but will try). I use shin instead, probably with similar results.

    It worked out in the end. I think the extra time I needed to reduce all the liquid gave the chunks the time to break down. But I think next time I'll just make sure it goes on earlier.

    Annoyingly I've given all my nice chilli's to a friend and the Sainsbury near me doesn't have aa good range.

    @amey - do you roast the marrow first? One thing I've done in the past as a cheat for extra flavour is using a decent tinned beef consumme.

  • I just dun a big vat of beetroot, chilli and coriander soup using leftover chicken carcass for the stock, and a load of beets and the stems.

  • Speaking of hot sauce. Freightliners farm in N7 have big (slice of cake) boxes of green chillies for sale for £2, in the cafe. Farm grown and hot.
    How do I know? I priced them. Got myself a weekend job!

  • I got chicken. Wife got plain veg and that won. Those rotis are rad. We also got the greens in fish paste which were real good. And the dessert one too because we are pigs.
