Right, back to tandem talk as going for bike fit next week with Scherrit. The forks specifically.
I have the opportunity to get some lush custom carbon ones made out of the states or get Matt to make me a set. Carbon or steel?

You planning on touring on it ever? I personally don't like the idea of carbon on a tandem unless it's for racing on. If its for some family fun I don't how carbon offers anything

It's primary purpose would be multi day family touring. Not self sufficient carry the kitchen sink and tent touring, moreso, riding from B&B to B&B with rear panniers or frame bag.
