What are the things that look like 'gear cable style inline adjusters' on my hydraulic hoses?
Probably anti frame rub buffers or something.
Also, what do I do if my brakes are currently rubbing?
Reset the pistons then re-align the caliper.
Check out the manual fo' yo' brakes to find out how to reset without buggering them up.
