I'm not talking about quill stems. Maybe I didn't explain it right but spacers on top of stems have no function and can never be pornworthy for me, nor can upward angled stems.

Quill stems have to go up, then across. I'm sure this is where the dated idea of 'correct' comes from.
A 0° stem is the best (stiffest and lightest) for modern stems (and is upward angled on the bike).
I'm not criticising, just opening your eyes to new awesomeness! :-)
I think quill stem do that to correct the angle of the headtube, so, theorically, is should get closer to zero.
