I am running a pair of mavic crossones with a 105 11speed cassette.
Mavic have been shimano 11speed compatible since before shimano 11speed was introduced as there freehub is longer than a standard 10speed one and needed a washer to use with 10speed

I'm close to needing to rebuild my do it all wheels that are used for everything, all year round. They are archetypes on DA - 28/24 and have been solid.
Before I go ahead and build the same again, is there anything else rim wise I should consider? I'd love something deeper for some aero benefit, but not at the cost of solid braking. So carbon is probably out, unless it has alloy braking.
Any ideas appreciated.

Problem with going deeper and not going carbon is the weight gain will increase exponentially. I have some Vision team 35s I think. Aluminium, 1650g shimano 11 speed, wide him . Unless you're talking about fixed ofc

Not fixed. I'm less bothered about weight (within reason), I just want something as good as my archetypes have been but deeper for the aeroz. I'll read more into the Flo's.

Well I've only had them for the summer so can't really comment on long term use, but have ridden them in the rain and they are just as good. One thing I must say the vision hubs are freaking spectacular. Spin for dayzzz. As mentioned bought some Vision carbon tubs off Planet X so will be using the alus as winter wheels.

I've just had my wheel rebuilt - the old Pacenti SL23 (from last year) cracked around a nipple; a common problem apparently. Replaced under warranty with this year's rim, and one thing I can say straight away - it's SO much easier to get your tyre on. Was able to thumb it on without any effort at all. Granted it was a well used tyre, but seeing as before I'd have to use all the strength my mighty cyclist arms could muster to get it on, this is wonderful.
Assuming it will no longer break, I can now recommend these rims without reservation. -

That make a lots of sense, the middle make light work of putting tyres on.
That remind me to see if they redesign the flawed PL23.

Slightly off topic.
Can anyone think of a way to stop a chain shifting off the edge of a bastardised 11 speed cassette that is now a 10 speed? The cassette will be spaced away from the spokes to fill the gap the removed 16T cog once filled. It will be used for a turbo so in theory I shouldn't ever shift that far, but I worry in the middle of some turbo hell I might forget and do it anyway.
Any ideas?
Note: using limit screws is not an option
