Why would you want to, for a specific tire?
Do you have 559 wheels already?
With a 12.5mm difference in brake drop it'd be a bit of a stretch, you'd more than likely have to switch brakes.
The bigger wheels will be heavier. -

Epping is like Swinley used to be, you could be 10ft from an amazing trail but miss it. It's obviously best with a guide, but I'm sure you could find some decent riding just by getting lost.

Ride along the fire-roads until you see the beginning of a small trail and then see where it goes. Finding decent bits to ride is pretty simple. The tricky bit is working out where they all are in relation to each other.
There's usually enough people about on the weekend, so somebody will be able to point you in the right direction.

Where can I get a 135 mm rear adaptor/axle to convert a quick release hub to track nut/allen bolt style for singlespeed?

Certainly isn't, DT hubs have fat axles and cartridge bearings. You can convert to 135×10 through axle and then use an M10 axle & track nuts instead of the DT 10mm RWS, or you could get your machinist to copy the 135×10 through axle but with a narrower bore and M10 tapped ends for bolts.
Not sure if this kit fits 340 but based on other axle compatibility I think it should.

Suntour mechs/shifters have their own very uncompatible shift ratio i.e your Sunrace thumby just won't work with it as the cable pull isn't the same.

If I've got enough clearance to run a 650b wheel in a 26" frame is it also likely I'll be able to get a v brake to reach the rim?
