  • I've got a big Weber and the Pitt Cue book so got all the indirect heat stuff planned. Stalled meat? Talk to me.

  • It was discussed on here a few years ago I think. Basically it needs more time than you might think. A whole lamb shoulder, bone in, probably is similar to pork shoulder. See this:

  • The stall still throws me when doing low and slow. You can't hurry the cooking and just have to wait, the meat gets tense and shrinks a little while the connective tissue contracts. Eventually it just goes "aaah fuckit" and relaxes, the temp starts to rise again and once it gets to the correct core heat take the joint from the smoker.

    Wrap in tin foil and a blanket and leave it to stand and relax. When I do 2 or 3 pork shoulders the one that we eat last which has then stood for 3-5 hours is the most succulent and pulls apart most easily.

    Patience is the key.

  • Had drunk hot wings on way home from drunk Byron burger last night. Eating cold American hot pizza in bed for breakfast. Win.

  • Sadly dinner plans were rearranged for late afternoon so I didn't have time for a low and slow BBQ. Next time Gadget, next time.

  • Onion powder. Appears to have been erased from the history books, I swear this used to be available everywhere. I must of tried twenty supermarkets, corner shops etc over the last week, it's sending me mental.

  • I got onion powder at some point for a BBQ rub, maybe from Brixton Tesco?? But my memory is faulty.

    I get spice powders from the Sri Lankan shops on Lee High Road in Lewisham, so much cheaper than supermarkets.

    Not ridiculously pricey
    Central ish. But not Covent garden as I hate that place
    My old man, being or a certain generation, isn't keen on certain forrin food, but all European stuff and Indian and Chinese is fine
    Somewhere a bit different and unusual, preferably not just your standard steak / burger / fish n'chips type menu

  • Went to dishoom last night, Kings Cross one, yeah +1 it's good, not 'too' pricey, if you don't sink a few cocktails, which we did.

  • polpo is good - tho if you're trying to feed more than 2 people it can end up being a bit dear and i suspect they may not take bookings. in fact most places in soho dont take bookings on account of them being run by fucking cunts.

    Foxlow on St. John's is ok, St. John's is expectional but pricey across the road.

    Black house Steak & Grill opposite is decent by the meat market (sign up online for 20% off).

    As above Quality Chop House is great.

    Anywhere on Exmouth Market you can't go wrong - Morro's!

  • ^ basically eat in Farringdon. Crazy good area for a few pre drinks and decent food. Check out Dove tail for some Belgium craft.

    Or the Jerusalem. Simple lovely.

    Granger & Co on Clerkenwell green is good and not too pricey.

  • I like the idea of Dishoom; never been .. the menu is refreshing to the usual curry house. The place that they have taken heavy inspiration from is off the chain ..

    The criticism I've heard from desis is that the portions are too small for the price.

  • Technically not brick lane and already tried. Cant take a booking of our size (~11) on Saturday night...
