Why? Easy to keep consistent high power down at lower cadence, and allows you to bring more upper body into play. You try producing 700w+ for 60s at 110rpm+....
Genuine question, but if that were true, then why isn't everyone riding at lower cadences if its easier to hold higher power outputs?
I don't think I could do it at any RPM tbh but I was under the impression that it is easier to hold higher watts at higher RPM (to a point obviously).
