Cheers, I guess bars/levers is a personal preference. Saddle wise I went with practical and comfort as I ride a lot of long distance, will be completing Paris Brest on it this summer.

Prologo saddles are great. Ignore TM. Although I do agree that the levers could come up a couple of mm. Overall, a really nice build though. Silver chainset could also work with it IMO.

Unfortunately I don't, it's very anonymous besides the Gipiemme dropouts, and has no serial number. My best guess is that it has been a rental/beginners track bike and is made from low end tubing because of 26.4 seatpost size. The lugs are pretty nice though, and I enjoy the bike.
@Rodolfo the rims are Mavic XM 119, it's a disc brake rim and has no brake track so no need for fancy tricks. It's strong, wide, cheap and pretty good looking if I can say so myself. :)

Right - I'm looking to make my Croix de Fer 1x10 because I robbed the 5800 group that was in place for another bike, so need a new cassette for the CdF and thought I might as well go 1x10 while I'm at it.
PG1030 11-36 cassette, right? What mechs will work with a 6600 shifter? Consensus online seems to be M771 work well, and M772 don't. Will anything pre-M771 work? I know fuck all about MTB mechs, but the word 'dynasys' keeps getting mentioned as something that doesn't play well (different cable pull).

Any normal 9 speed MTB derailleur will work, make sure you select the long cage option of the M771.
I recently went 1x11, actually great for cities, just waiting for the SRAM 11-36 to try with the 5800 derailleur.

1x10, with something like a 42 at the front seems like a good option for me, for exploring bridleways and woods and that.
Does anyone have a 9 speed long cage mech knocking about that I can buy off you? eBay prices are stupid for something which I'm sure people have knocking about their parts bins.

I'm not sure, they're noticeably harder to set up than the normal MTB derailleur (on MTB), occasionally I have to put a new cable and housing just so it can shift well.
In theory, the shadow should work considering it does have the same cable pull, my other theory to why the other people who mate the shadow derailleur to road levers may not have anticipated the low tolerance of such derailleur.
I'm sure @mdcc_tester will correct me on this.

This is what I'm running, I spun out a little on 42/11, but better to spun out on the descent than to run out on the climb.
Your bars/levers are a bit down for me, and another saddle (Flite or slr?) would suit it nicely.
Overall though very nice.
