Having just bought a CDF (30) and parted with a Giant Defy 1 / Ridgeback World Panorama (new flat - small porch), I definitely see your point regarding the speed, i've stuck 28mm Gatorskins on mine and it feels very close to the Ridgeback in ride, leisurely and comfortable, certainly not nippy, although the actual speeds aren't too bad if Strava is anything to go by.
This was however what I was after, front rack and seat post bag for some light touring over the summer.
I toured for 3 years, on a 56cm vapour with a long haul trucker fork. It felt very comfortable on long rides, and handled fine under heavy load, front and back, even if this was not what the frame was designed for. I also stripped it down and it was great off road.
I thought the Croix would be a similar fast tourer, but it is slower than I expected. I know because you are sensible you will say I should have a touring bike for touring, and a road bike if I want to go fast, and a cross bike for off road. But I dont have room.
