Novatec X-light (317g) + A23 (900g) + DT Comp (382g) = 1600
Novatec X-light (317g) + A23 (900g) + DT Rev (283g) = 1500
Shimano 105 (523g) + A23 (900g) + DT Comp (382g) = 1805
Shimano 105 (523g) + A23 (900g) + DT Rev (283g) = 1706- nipples and spoke washers...

The weight spoke manufacturers quote is always for a 260 mm one, which is a short size... you will need more like 285-290, so spokes will be heavier. Brass nipples are 1 g each, while the alloy ones are about 0.2-0.3 g.
I didn't know of them either... I've just fitted a pair and they appear to be just as grippy but more robust... although also less supple... I just find the Vittoria too expensive
Problem is that you want stiff, light and cheap and of course you need do make a choice.
The 5800 hubs are on the heavy side, so being within 1800 grams with those and DT comp is not an easy task... you'd have to look at Stans 340, which are not meant for someone your size and will not take pressure in excess of 90 PSI with inner tubes.
As for the tyres: have you considered Panaracer Gravel King? Much cheaper than the Vittoria and more robust
