Love these, no good for carrying about really but good memories attached to both already(weird?)

Get a lansky. The cheapest one will do. Sharpens mine since 2-3 years. Dead easy and good result.

Usually sand, it's used as a sort of flux.
[Edit] In the BBC film, it's clearly not sand. I suspect he's gone high tech and is using borax. -

Usually borax indeed.
Magnets are fine for knives as long as you don't chuck them on too hard.
I have one of those blocks that is a vertical holder of lots of thin plastic rods, it works great.
If you have a traditional wooden block then make sure you put the knives in with the edges up, not down. Helps to prevent edge curl.
And use your steel.
And never leave them wet, or worse: covered in veggie or fruit juices. Rinse, wipe, dry. Every time.
And no fucking dishwasher.
