I'm thinking dynamo wheel, panniers and stuff too. The pompino was supposed to have a rear pannier but when I put it on it messed with the chaintugs so took it off. Looking at these as a possible wheelset or something similar to those but disc.
I did consider 650b or whatever it is "monster" but then it's a mission to get the wheels sorted either handbuilt or I buy a truing stand and tensioner and sit for weeks building them to be a bit naff but ridable.

If you wish to put big tyres on then clearly the weight penalty of disc brakes ain't going to make a great difference.
