Just seems like an after thought "oh people don't like round saddles, we'll just put a groove in the padding" rather than an actual piece of design.
That said, I'm not the lightest rider (usually somewhere between 86-88kg currently) - though that arione versus has now been passed around several clubmates on trial and they all said it was awful too.

These are awful. The channel has no form or structure and compresses when you sit on it - leaving you with two semi-firm ridges pressed into you. The worst saddle I've ever used - cut me like a knife. Normal arione much better, if you want a cutaway, use a romin, troupe or similar.
