It holds the tube in and the tyre on the rim. And you're not risking damage pushing hard time onto the valve at the final 'pop' onto the rim.

Same here.
The valve being the most delicate part, I deal with that when the tyre is under least tension: on first, off last.

Normally yes valve last.
But when the tyre is hard to get on, doing the valve last leaves a bit more space and can help to get tyre on.

Have to chuckle at this - a clincher that is way, waaaaaaaaaaaaaaay harder than a tubular tyre to mount. Progress!

I'm looking for a new pair of wheels to replace the stock Fulcrum Racing 7s that came with my new bike (a Genesis Zero).
I'm not sure if this will be an immediate purchase or something for the future (after all, racing 7s aren't terrible). The only thing that might change this is an impending trip to the Alps and a desire to lose bike weight.
I have a set of Hope Pro 3 x Archetype on another bike that have served well so ideally I'd be looking for handbuilt rather than factory. I was thinking some Novatec hubs with some light rims (Kinlin XR19?) but Flo 30s do look tasty and would go with the stealthy / aero look of the new bike.
I'm 65-70kg, and these would be summer use only so they don't have to be super tough. I'd prefer to keep it clincher (it's all I know) and have something with an Alu brake track.
So - lightweight or aero? Any thoughts on combinations that work well?
EDIT - 11 Speed and not too bling - I can't afford CK :(
