I have fitting blocks on both my road and fixed bikes and have a spare seat post and saddle if I ever want to race or ride the track. Which is never.
I am amazed that I don't see more of them out in the cat 6 peleton.
I find that having so much weight attached to the bike that high up makes the bike handle really strangely - I expect you'd get used to that pretty quickly though.
Yes out of the saddle can be a bit odd when it is fully loaded. But for commuting weight it's fine.
