Mine; apologies for the poor pic.
Needs mudguards, bagman support for my carradice and a compact crankset. Toured last summer on her, very comfy and capable of being nippy when needed.

Spa Cycles have some nice selection of compact crankset, would recommend the 46/34 option.

What size is your Carradice?
I would just use your rack (if it's not too high) to support the bag - I assume it's the transverse style? -

The rack is actually too low to support it, and its a pendle. Its one of those irritating things that niggles, and I hate the way it dangles without support. Ugh.

No point when you can get the Genesis instead.

I know, but somehow the All-city looks rather nicer than then genesis and more exclusive in my eyes,
Granted the genesis is a lot cheaper to get the complete bike, especially from here:

Slap some cheapo chinese carbon disc forks on the day one will improve it no end without making it horribly expensive
