You can absolutely have an iPad for an hour record, but you're only allowed one person on track giving you splits. Voigt was using the same system that I use which live tracks your power, speed, cadence and CdA etc to track centre, which is then relayed to the coach trackside. But really all you want for an hour record is individual lap splits and then occasionally an update on your overall progress.
Good point...but with a coach at the side of the track telling them what to do that can't work much at that level. On another note, I'm sure I saw the Swiss coach showing his man lap times on an iPad when he went through...is that allowed? I know they can communicate with the riders, but showing them on a screen...
