Is there a way to convert a Shimano Saint front hub (FH-M800) with 20mm*110mm thru axle to a standard 9mm*100mm front axle with 5mm quick release?

You mean HB-M800, and no. The bearing units screw into the hubshell in a freaky way which precludes an economic modification.

Thanks. looking at the technical drawings from shimano I thought as much.
A bodge would be to file some mms off the axle tube and plug it with some other brands 20mm to 9mm converters.
But I'd probably die riding it.
