I thought you need to be more flexible to go down a size given the stack ..
Given the smaller frame's similar reach but lower stack, one might rightfully assume that Cavendish has switched by suggestion of his fitter in order to get himself even lower and more aerodynamic during sprint finishes.

No, it would just increase the reach slightly in a larger size, by about 15mm. Stem height wouldn't be affected, I don't think.
Going on the admittedly poor system of stack and reach, in a perfect world for my current flexibility I would have about 525 Stack and 360 Reach. Have fun finding that though.
I need a 48, not a 50, unfortunately. Thanks though!
I might even be able to fit that with my current flexibility, but I'm not taking a punt on it unless I know.
