I tried the pan method with some wholemeal chipati flour base, my gran's spicy onion + rhubarb chutters, cottage cheese, spinach leaves, parmesan and a smidge of nutmeg as my lunch.
Banging.
Quite a weird way to make a pizza but... crispy bottom, fluffy middle (almost - always hard with wholemeal) browned top.

@miro_o sounds different, but i na very good way.
Heston explains the pan/grill method quite well. Boils down to... massive quick application of heat seals the dough with a crispy outer so as the air expends its trapped inside, hence larger air bubbles. A pizza oven is at about 500 degrees plus and cooks a pizza in about 90 seconds, the grill and pan are doing exactly the same just in 2 sep cooks which if done with no gap between them makes no difference.

I went with work folks and they all got pizza but as I am having it tonight had to just sit and watch.. sodo pizza, which I am not actually a massive fan of, and the oven was obvs a little cold..

Lots going on. Figs and raw red onions together? Or are the onion slices vinegared? Basil and watercress... someone just put a salad on an ill conceived pizza. I'm out.
The only time celery should be on a pizza is blended in the sauce.

Pizza pilgrims pan and grill technique. Roast beetroot, blue cheese and walnut. Pretty damn pleased with the results.
