Ah, when you wrote "big gear" I thought you meant big sprockets.
"...gear for the fast parts of the course, not the slow parts..." is quite the opposite of my, very limited, experience: I don't recover downhill, what I lose uphill.
The fact you're half my age-ish, is likely a factor though...
