I carry my wind jacket loads. As its nicely breathable I dont hesitate to chuck it on when Things get chilly. I've previously carried a rain jacket that I never used. I knew I'd sweat it out horribly.
For proper changable stuff I've worn a sleeveless merino base under my jersey, and carried Wind jacket + merino arm warmers. You can ride in Comfort despite a massive temp drop just having those small items on you.
