For light touring you could consider P-clips to attach a rack. Wouldn't want more than 10kg or so attached that way though.
For a Carradice it depends on the volume of stuff you want to take:-
Barley: 9L Pendle: 11L Nelson: 15L Nelson Longflap: 18L Camper Longflag: 24L
I use a Barley for longer Audaxes (over 300km) where I have to carry stuff for poor weather or night riding.
As ^ says, the size bag you can fit will depend on distance between seat rails and tyre.
