  • Pizza Express use it on their pizzas So you know it's good

    *it really is, actually.

  • Yes it does GH. Pig guts, head, fat and spices. Its like crossing the streams man.

  • guts?

    out. it's not 1945 anymore.

  • By hell lad, you were lucky to see a gut in 1945. T'cat next door died of old age and mother made its guts into mock herring. T'whole street copped a dose, mind.

  • i'm sorry i don't speak poor.

  • Where do I get this wonder offal? I expect TS could my local pusher.

    high fives

  • As everyones buying Short Ribs, shall we all document what we're doing with them? I have two sat at home in vac-pac covered in a dry rub, with hickory liquid smoke. they're going into a water bath tonight at 60c for 3 days...

  • Meat is measured in kg in the UK?

  • Yep... Weight, Volume are typically Metric, Distance in Imperial. mental.

  • Since 1995, following an EC directive. Supplimentary indicators are still permitted.

Pubs can still sell draught beer in pints (50 decilitres sounds pretty unappetising, after all), and returnable milk can also be sold in pints.

    Imperial measurement is utterly backward.

  • Just been to the Waitrose in Whitecross st to get Short rib on the news above; reduce to £3.55 on the Butchers counter. at least 12kgs left if anyone else nearby....I can't carry any more.
Oh, and got two marrowbones for £1.50; should thicken the sauce nicely.

  • i'm just round the corner from there but I'm going out this evening. should I ride around with a kilo or two of ribs in my bag til later?

  • They will be fine; think of it as training. £3.55 a kilo is a bargain.

  • they're going into a water bath tonight at 60c for 3 days...

Question regarding meat-cook: Does anything change with keeping a temperature for 3 days or is it all about core temperature?

I admit to being vegetarian for my childhood and most of my adult life. I do not have much practice cooking the meats.

    Buy all 12kg.
