As everyones buying Short Ribs, shall we all document what we're doing with them? I have two sat at home in vac-pac covered in a dry rub, with hickory liquid smoke. they're going into a water bath tonight at 60c for 3 days...

Imperial measurement is utterly backward.

Just been to the Waitrose in Whitecross st to get Short rib on the news above; reduce to £3.55 on the Butchers counter. at least 12kgs left if anyone else nearby....I can't carry any more.
Oh, and got two marrowbones for £1.50; should thicken the sauce nicely. -

Question regarding meat-cook: Does anything change with keeping a temperature for 3 days or is it all about core temperature?
I admit to being vegetarian for my childhood and most of my adult life. I do not have much practice cooking the meats.
