Getting closer. Archetype rims arrived, as well as Profile Racing hubs. The rims are spot on, however, I will probably keep the hubs for another, cheaper build or as a backup. I've found my perfect hubs in White Industries track hubs with splined cogs and will probably order those. They are 100% old school, high flange, with nice bronze axle nuts. Also, they are one-sided only (rear) with cut slots in flanges.

Also decided on Wheelsmith spokes instead of DT Swiss. I will also put Continental GatorSkins because they are easier to come by.
The bike could almost be finished by the end of next month, but the hubs are a set back. My prediction is September.
