Shredded chicken in tomato chipotle sauce is also called 'tinga de pollo'. I vouch for it being good. This is probably a more trustworthy recipe source: http://www.fronterafiesta.com/cook/tacos-enchiladas-tamales-tostadas/30-chipotle-chicken-tinga-tacos Of course you can just make the tinga and eat it in a non-taco environment.
You would have to substitute the salsa for chopped chipotle peppers in adobo which comes in cans. I think you can get it at sainsbury's or waitrose or for sure any mexican specialty place. The cilantro for garnish is the same thing as 'coriander' if that helps.
