Alpha Bar Salad bar in the covered market, but the market is probably closed on the bank holiday.
There's a pub- gardeners arms which is veggie, and OK.
And there's a little cafe down a side street next to the Odeon Cinema on Magdalen St,
Apparently called the Organic Deli cafe.
The last one is quite good.
