Cheers guys. I'm confident enough that I'm going to pan fry a small bit to taste it and see how they are. Going by colour, firmness of the flesh and the gills running the full length to where they were growing from the tree. Also I left them on a dark plate to get a spore print and it's got a lilac tint to it so from the evidence they're oysters (to me at least anyway).

Depending on how much shape is lest of the hex you could;
a) superglue the allen key into the bolt head and it might hold enough to unscrew, I'm doubtful as there's a bit of corrosion there and the capscrews will likely be pretty stuck.
b) try and force the nearest equivalent size of imperial allen key into the hex
Other than that you're on to more destructive methods like Tijmen suggested. You can also drill into the capscrew and try to remove using an "Easy Out" but I'd leave that until you've exhausted all other options cause once you start drilling that's it.

This is purely anecdotal on my part but I've made a few ferments this year using mainly the Sandor Katz book as inspiration. I haven't sterilised a single jar etc, just a simple wash in the sink. I've not had any issues with mould etc. Sandor also advocates for not needing to sterilise vessels in the book.

Also new Wolves in the Throne Room out today but so far the singles already released are the strong tracks. Will need to listen to it more.
