Putting some old scoby liquid in is always best because it's acidic and will stop less desirable organisms from taking over. I've refreshed from scratch and had SCOBY float back to the top but often I just end up with a new scoby growing on the surface and eventually I'll carefully lift up the new one, bin the old submariner and then place the new one back on the surface.

I think those guys are centipedes rather than a caterpillars. The saw is possibly an overkill method of getting rid of them. Were they eating the cactus? They may have been eating other bugs..

Well the beetroot and horseradish thing is tasting good, it didn't ferment as vigorously as I was expecting, dunno if that is typical of beetroot, or maybe our house is a bit on the cool side. It's got a nice acidic tang though as well as earthiness from the beetroot and a nice crisp heat from the horseradish but not overpowering.

Ended up blitzing the horseradish which was going well until I lifted the lid and it was like breathing in fire.

I have been actively avoiding buying mincers as I thought the season finished in December. All this talk about the season actually closing on the 6th has got me excited - it's like xmas all over again!

In bargain news, my GF brought home a box of Asda Extra-Special mincers for 16p. 16p!
